Preparation

1. Toast the Bread

Preheat a skillet or griddle over medium heat. Toast the rye bread slices until golden brown, about 2-3 minutes on each side.

2. Prepare the Meats

Layer the corned beef and pastrami on a clean cutting board. If you prefer warm meats, you can heat them slightly in the microwave for 30 seconds.

3. Slice the Onion

Finely chop the onion to your desired size.

4. Prepare the Sauerkraut

Drain the sauerkraut and set aside.

Assembly

5. Build the Sandwich

On one slice of toasted rye bread, spread the Dijon mustard evenly. Layer half of the corned beef, followed by the pastrami, Swiss cheese, drained sauerkraut, onions, and pickle slices. Top with the second slice of rye bread.

Cooking

6. Grill the Sandwich

Place the assembled sandwich back on the skillet or griddle. Grill for about 4-5 minutes on each side, or until the cheese is melted and the bread is crispy.

7. Serve

Remove the sandwich from the skillet and let it cool for a minute. Slice it in half and serve with extra pickle slices on the side.
