    Clean the Fish

    Rinse the whole red snapper under cold water. Use a sharp knife to make a few diagonal slashes on both sides of the fish to allow the marinade to penetrate.

    Make the Marinade

    In a small bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Mix well.

    Season the Fish

    Rub the marinade all over the red snapper, making sure to get it into the slashes and the cavity of the fish. Stuff the cavity with lemon slices and fresh thyme. Let the fish marinate for at least 30 minutes.

Grilling

    Prepare the Grill

    Light the charcoal briquettes in a grill. Once they are covered with gray ash, spread them evenly across the grill. Place a water pan in the center to maintain moisture while grilling.

    Grill the Fish

    Place the whole red snapper on the grill over direct heat. Grill for about 6-8 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Check for Doneness

    The internal temperature should reach 145°F (63°C). Remove the fish from the grill and let it rest for a few minutes before serving.
