Marinade

Serving

Method

Marinade Preparation

  1. 1

    Mix the Marinade

In a large bowl, combine the Greek yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, paprika, turmeric, garam masala, salt, and black pepper. Mix well until all ingredients are fully incorporated.

  2. 2

    Marinate the Chicken

Add the boneless, skinless chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Cooking

  1. 3

    Grill the Chicken

Preheat your grill to medium-high heat. Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 15 minutes. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken has nice grill marks.

  2. 4

    Cook the Rice

While the chicken is grilling, rinse the basmati rice under cold water until the water runs clear. In a pot, combine 2 cups of rice with 4 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Serving

  1. 5

    Prepare to Serve

Once the chicken is grilled and the rice is cooked, fluff the rice with a fork. Serve the grilled chicken over a bed of basmati rice, garnished with chopped cilantro and lemon wedges. Accompany with naan bread on the side.
