Prepare the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined.

    Gradually add the cold water to the dry mixture, whisking continuously until the batter is smooth and free of lumps. Set aside for about 15 minutes.

Prepare the Fish

    Prepare Cod Fillets

    Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with a pinch of salt and pepper.

Fry the Fish

    In a large deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dip each cod fillet into the prepared batter, ensuring it is fully coated. Carefully place the battered fillets into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and crispy.
