    Prepare the Ingredients

    Rinse the long-grain parboiled rice under cold water until the water runs clear. Chop the fresh tomatoes, onion, and bell pepper into small pieces. Mince the garlic and ginger.

    Blend Tomato Mixture

    In a blender, combine the chopped fresh tomatoes, tomato paste, onion, garlic, and ginger. Blend until smooth to create a tomato sauce.

    Cook the Base

    In a large pot, heat a little oil over medium heat. Pour in the blended tomato mixture and cook for about 10 minutes, stirring occasionally until it thickens.

    Add Rice and Broth

    Add the rinsed rice to the pot and stir to coat with the tomato mixture. Pour in the chicken broth and add thyme, bay leaves, salt, black pepper, and cayenne pepper. Stir well.

    Simmer the Rice

    Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked and the liquid is absorbed.

    Add Optional Ingredients

    If using, add the mixed vegetables and protein of your choice during the last 10 minutes of cooking. Stir well to combine and cover the pot.

    Fluff and Serve

    Once the rice is cooked, remove the pot from heat. Let it sit for 5 minutes. Fluff the rice with a fork and serve hot.
