Method

For the Skewers

  1. 1

    Prepare the Steak

Cut the top sirloin steak into 1-inch cubes.

  2. 2

    Marinate the Steak

In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the steak cubes and toss to coat. Let marinate for at least 30 minutes.

  3. 3

    Skewer the Steak

Thread the marinated steak cubes onto wooden skewers, about 4-5 pieces per skewer.

For the Rice

  1. 4

    Rinse the Rice

Rinse the white rice under cold water until the water runs clear.

  2. 5

    Cook the Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.

For the Beans

  1. 6

    Heat the Beans

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

  2. 7

    Add Beans and Season

Add the canned black beans (drained and rinsed) and cumin. Stir to combine and heat through, about 5 minutes.

For the French Fries

  1. 8

    Prepare the Potatoes

Peel the potatoes and cut them into thin strips.

  2. 9

    Heat the Oil

In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 10

    Fry the Potatoes

Carefully add the potato strips to the hot oil in batches and fry until golden brown, about 4-6 minutes per batch. Drain on paper towels and sprinkle with salt.

For the Chimichurri

  1. 11

    Combine Ingredients

In a bowl, mix together chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

  2. 12

    Blend

Stir well to combine and let sit at room temperature for at least 15 minutes to allow the flavors to meld.
