Method

Preparation of Yucca

  1. 1

    Peeling the Yucca

Using a sharp knife, carefully peel the yucca root to remove the tough outer skin. Cut the yucca into 2-inch pieces.

  2. 2

    Cooking the Yucca

In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt and the yucca pieces. Cook for about 20-25 minutes, or until the yucca is tender when pierced with a fork. Drain and set aside.

Cooking the Sirloin

  1. 3

    Preparing the Steak

Pat the sirloin steak dry with paper towels. Season both sides with 1 tsp of salt and 0.5 tsp of black pepper.

  2. 4

    Searing the Steak

In a large skillet, melt 2 tablespoons of unsalted butter over medium-high heat. Once the butter is foamy, add the sirloin steak. Sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

  3. 5

    Resting the Steak

Once cooked, remove the steak from the skillet and let it rest for 5 minutes before slicing.

Final Assembly

  1. 6

    Serving the Dish

Slice the rested sirloin steak against the grain. Serve alongside the cooked yucca. Drizzle the remaining 2 tablespoons of melted butter over the yucca and steak for added flavor.
