Dough Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour, carom seeds, and salt. Mix well.

Add Oil
Add the oil to the flour mixture and rub it between your palms until the mixture resembles breadcrumbs.

Knead the Dough
Gradually add water, a tablespoon at a time, and knead until you form a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

Add Onions and Spices
Add chopped onions and sauté until they are translucent. Then add ginger, green chili, coriander powder, garam masala, and salt. Cook for 2-3 minutes.

Roll the Dough
Divide the dough into small balls. Roll each ball into a thin oval shape, about 6 inches long.

Shape the Samosas
Cut the rolled oval in half to form two semi-circles. Take one semi-circle, fold it into a cone shape, and seal the edge with water.

Fill the Cone
Stuff the cone with the filling, then seal the open edge by pressing it tightly with your fingers.

Heat Oil
In a deep frying pan, heat oil over medium-high heat until hot.

Fry the Samosas
Carefully add the prepared samosas to the hot oil, a few at a time. Fry until golden brown and crispy, about 5-7 minutes.

Drain and Serve
Remove samosas from the oil and drain on paper towels. Serve hot with chutney or sauce.
