Preparation of Ingredients

    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Marinate the Chicken

    In a large bowl, combine the chicken pieces with yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, and salt. Mix well and let marinate for at least 1 hour, preferably overnight.

    Chop Vegetables

    Thinly slice the onions and chop the tomatoes, cilantro, and mint leaves.

Cooking Process

    Fry Onions

    In a large pot, heat the cooking oil or ghee over medium heat. Add the sliced onions and fry until golden brown. Remove half of the onions for garnishing later.

    Cook Chicken

    Add the marinated chicken and whole garam masala to the pot with the remaining onions. Cook until the chicken is browned and cooked through, about 15-20 minutes.

    Add Tomatoes and Herbs

    Stir in the chopped tomatoes, cilantro, and mint leaves. Cook for an additional 5 minutes until the tomatoes soften.

    Layer the Rice

    In the same pot, add the soaked and drained basmati rice over the chicken mixture. Spread evenly.

    Add Water

    Pour in the 4 cups of water. Bring to a boil, then reduce the heat to low. Cover and cook for 20-25 minutes, or until the rice is fully cooked and the water is evaporated.

    Garnish and Serve

    Once cooked, fluff the biryani with a fork and garnish with the reserved fried onions. Serve hot with raita or salad.
