Caramel
Flan Mixture
Method
Caramel Preparation
- 1
Prepare the caramel
In a medium saucepan, combine 1 cup of granulated sugar and 2 tablespoons of water. Cook over medium heat, stirring until the sugar dissolves. Stop stirring and allow the mixture to boil until it turns a golden amber color. This should take about 5-7 minutes. Once ready, quickly pour the caramel into a round flan mold or a loaf pan, tilting to coat the bottom evenly. Set aside to cool and harden.
Flan Preparation
- 2
Mix the flan ingredients
In a blender, combine 1 can of sweetened condensed milk, 1 can of evaporated milk, 3 large eggs, 1 teaspoon of vanilla extract, and 3 tablespoons of granulated sugar. Blend until smooth and well combined, about 1-2 minutes.
- 3
Pour into the mold
Once the caramel has hardened, carefully pour the flan mixture over the caramel in the mold. Ensure that the caramel is completely covered.
- 4
Bake the flan
Preheat your oven to 350°F (175°C). Place the flan mold in a larger baking dish and fill the baking dish with hot water halfway up the sides of the flan mold. Bake for 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.
- 5
Cool and serve
Remove the flan from the water bath and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, place a serving plate on top of the mold, and invert to release the flan. The caramel will flow over the top.
