In a large bowl, combine the olive oil, minced garlic, dried oregano, ground cumin, paprika, salt, and black pepper. Add the pork shoulder and massage the marinade into the meat. Cover and refrigerate for at least 2 hours, preferably overnight.

In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Mix well and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Assembling the Gyro

After the pork has rested, use a sharp knife to slice it thinly against the grain.

Place a generous amount of sliced pork on each warm pita. Top with diced tomatoes, red onion slices, shredded lettuce, and a few spoonfuls of tzatziki sauce.
