    Prepare the Ingredients

    Begin by chopping the bell pepper, onion, and celery into small pieces. Mince the garlic and set aside.

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped bell pepper, onion, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Add the Remaining Ingredients

    Stir in the canned diced tomatoes (with juice), chicken broth, bay leaves, Cajun seasoning, salt, and black pepper. Bring the mixture to a simmer.
