Preparation

  1. 1

    Prepare the Ingredients

Slice the chicken breast into thin strips. Rinse and peel the shrimp. Prepare the vegetables by slicing the bell peppers, julienning the carrot, and cutting the broccoli into florets. Mince the garlic and ginger.

Cooking

  1. 2

    Cook the Chicken

In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken breast and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

  2. 3

    Cook the Shrimp

In the same skillet, add another tablespoon of oil. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside with the chicken.

  3. 4

    Sauté the Vegetables

Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant. Then, add the bell peppers, carrot, and broccoli. Stir-fry for about 5 minutes until the vegetables are tender yet crisp.

  4. 5

    Make the Sauce

In a small bowl, whisk together the soy sauce, fish sauce, sugar, lime juice, and chili paste until combined.

  5. 6

    Combine Everything

Return the chicken and shrimp to the skillet with the vegetables. Pour the sauce over the mixture, followed by the coconut milk. Stir well to combine and let simmer for 3-5 minutes.

  6. 7

    Finish the Dish

Add the Thai basil leaves, stirring them into the dish just before serving. Adjust seasoning with salt and pepper to taste.
