Prepare Rice

    Cook the Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

Cook Vegetables and Protein

    Sauté Vegetables

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the diced carrot and bell pepper, and cook for 3-4 minutes until they start to soften. Add the green peas and sliced green onions, and stir-fry for another 2 minutes.

    Add Proteins

    Push the vegetables to one side of the skillet. In the cleared space, scramble the eggs until fully cooked. Add the cooked chicken and shrimp, mixing everything together and cooking until the shrimp turns pink, about 2-3 minutes.

Combine and Finish

    Mix in Rice

    Add the cooked jasmine rice to the skillet, stirring well to combine all ingredients. Pour in the soy sauce, and season with salt, black pepper, and red pepper flakes. Stir-fry for an additional 3-4 minutes until heated through and flavors meld.
