Blend the Peppers and Tomatoes
In a blender, combine the fresh tomatoes and red bell peppers. Blend until smooth and set aside.

Cook the Base
Once the chicken is browned, add the minced garlic, grated ginger, thyme, curry powder, salt, black pepper, and seasoning cubes. Stir well and let it cook for about 5 minutes.

Stir in the tomato paste and cook for another 5 minutes, allowing the flavors to meld.

Add the blended tomato and pepper mixture to the pot. Stir everything together and bring to a simmer. Cook for 15-20 minutes until the sauce thickens.

Add the long-grain parboiled rice and chicken broth to the pot. Stir well to combine and ensure the rice is submerged in the liquid.

Add the bay leaves, stir, and cover the pot. Lower the heat and let it cook for 30-35 minutes, or until the rice is fully cooked and has absorbed the liquid.
