In a small bowl, mix 1 tablespoon of plain yogurt with a few tablespoons of the warm milk mixture to temper it. Then, whisk this mixture back into the saucepan. This introduces the live cultures needed for fermentation.

Set Up for Fermentation
Pour the yogurt mixture into a clean glass or ceramic container. Cover it with a lid or a clean kitchen towel. Place it in a warm area (around 100°F or 37°C) for 6-12 hours, depending on how tangy you want the yogurt.

After the fermentation time, check the yogurt. It should be thickened and have a tangy flavor. If it's not thick enough, you can leave it for a few more hours.
