Cool the Milk
Remove the saucepan from heat and let the milk cool down to 110°F (43°C). You can use a kitchen thermometer to ensure the right temperature.

Add Yogurt Starter
In a small bowl, mix 1 cup of plain yogurt with a few tablespoons of the cooled milk until smooth. Then, whisk this mixture back into the saucepan with the rest of the cooled milk.

Incubate the Yogurt
Cover the saucepan with a lid or a clean kitchen towel and place it in a warm environment (like an oven with the light on or a yogurt maker) for 6-12 hours. The longer it sits, the tangier it will become.
