Method

Jollof Rice Preparation

    Prepare the Base

    In a blender, combine tomatoes, chopped onion, red bell pepper, garlic, and ginger. Blend until smooth.

    Cook the Sauce

    In a large pot, heat vegetable oil over medium heat. Pour in the blended mixture, add tomato paste, and cook for about 10-15 minutes until the sauce thickens and the oil begins to separate.

    Add Rice and Broth

    Add the long-grain rice to the pot, stirring well to combine. Then pour in the chicken or vegetable broth, add bay leaves, thyme, salt, and black pepper. Mix well.

    Simmer

    Cover the pot with a tight-fitting lid, reduce the heat to low, and let it simmer for about 30-35 minutes until the rice is cooked and has absorbed all the liquid.

    Fluff and Serve

    Once cooked, remove the bay leaves and fluff the rice with a fork. Serve hot alongside your choice of protein.

Protein Preparation

    Marinate the Protein

    In a bowl, combine your choice of protein (chicken, beef, or fish) with sliced onion, minced garlic, grated ginger, paprika, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.

    Cook the Protein

    In a skillet, heat oil over medium-high heat. Add the marinated protein and cook until browned and cooked through (about 8-10 minutes for chicken or fish, and 10-15 minutes for beef).

    Serve

    Once the protein is cooked, remove from heat and serve alongside the Jollof rice.
