Preparing the Marinade

    Blend the Marinade

    In a blender, combine the scotch bonnet peppers, garlic cloves, green onions, fresh thyme, ground allspice, brown sugar, soy sauce, lime juice, salt, and black pepper. Blend until smooth.

    Marinate the Chicken

    Place the whole chicken in a large bowl or resealable plastic bag. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Grilling the Chicken

    Preheat the Grill

    Prepare your charcoal grill by lighting the charcoal and allowing it to burn until covered with white ash. This should take about 20-30 minutes.

    Grill the Chicken

    Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the grill, breast side down. Grill for 20-25 minutes per side, or until the internal temperature reaches 165°F (75°C).

Preparing the Garnish

    Slice the Cabbage

    While the chicken is grilling, slice the cabbage into thin strips. If using carrots, shred them as well. Set aside for garnish.

Serving

    Plate the Chicken

    Once the chicken is cooked, remove it from the grill and let it rest for about 10 minutes. Carve the chicken into pieces and arrange on a serving platter.

    Add the Garnish

    Top the chicken with the sliced cabbage and shredded carrots (if using) before serving.
