Prepare the Ginger
Peel and finely grate the fresh ginger root. You should have about 1 cup of grated ginger.

Boil the Water
In a large pot, bring 4 cups of water to a boil.

If using, add the cloves and allspice berries to the pot for additional flavor. Let the mixture simmer for about 10 minutes.

Cool the Mixture
Remove the pot from heat and allow the ginger mixture to cool to room temperature.

Strain the Mixture
Using a fine mesh strainer or cheesecloth, strain the mixture into a large bowl or pitcher to remove the ginger and spices.

Add Lime Juice and Yeast
Stir in the lime juice and sprinkle the yeast over the top. Mix gently to combine.

Ferment the Ginger Beer
Cover the bowl or pitcher with a clean cloth and let it sit at room temperature for about 24 hours, allowing fermentation to occur.
Bottling

Bottle the Ginger Beer
After 24 hours, carefully pour the ginger beer into clean glass bottles, leaving some space at the top. Seal the bottles tightly.

Store the bottles in the refrigerator. It is best to let them chill for at least 12 hours before serving.
