Method

Cooking Sushi Rice

    Rinse the Rice

    In a fine-mesh sieve, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has rested, transfer it to a large bowl and fold in the vinegar mixture gently. Allow it to cool to room temperature.

Preparing Seafood Filling

    Marinate the Seafood

    In a bowl, combine shrimp, scallops, salmon, soy sauce, sesame oil, and minced garlic. Mix well to coat the seafood evenly. Let it marinate for 15 minutes.

    In a skillet over medium heat, add the marinated seafood. Cook for about 5-7 minutes, stirring frequently until the seafood is cooked through. Remove from heat and stir in chopped green onions.

Assembling the Sushi

    Lay a sheet of nori on a bamboo sushi mat or a clean cutting board, shiny side down.

    Wet your hands with water to prevent sticking. Take about a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    In the center of the rice, add a layer of the cooked seafood, followed by julienned cucumber, avocado slices, and carrot.

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Seal the edges with a little water.

    With a sharp knife, slice the sushi roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to maintain clean edges.

Serving the Sushi
