Preparing the Salad

    Prepare the Vegetables

    Rinse the mixed greens thoroughly under cold water and spin dry or pat dry with a paper towel. Halve the cherry tomatoes and set aside. Peel and thinly slice the cucumber, and then cut it into half-moon shapes. Peel the carrot and julienne or grate it.

Grilling the Shrimp

    Marinate the Shrimp

    In a bowl, combine the olive oil, minced garlic, lemon juice, salt, and pepper. Add the shrimp and toss to coat evenly. Let it marinate for about 15-20 minutes.

    Grill the Shrimp

    Heat a grill or grill pan over medium-high heat. Thread the shrimp onto skewers if desired. Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from the grill and set aside.

Making the Cheese Dressing

    Prepare the Dressing

    In a mixing bowl, combine mayonnaise, grated Parmesan cheese, Dijon mustard, garlic powder, lemon juice, salt, and pepper. Whisk until smooth and creamy. Adjust seasoning to taste.

Assembling the Salad

    Combine Ingredients

    In a large serving bowl, combine the prepared mixed greens, cherry tomatoes, cucumbers, and carrots. Add the grilled shrimp on top.

    Dress the Salad

    Drizzle the cheese dressing over the top of the salad. Toss gently to combine and coat all ingredients with the dressing. Serve immediately.
