Main Ingredients

Method

Preparation

  1. 1

    Prepare the Potatoes

Peel and dice the potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender. Drain and set aside.

  2. 2

    Prepare the Vegetables

Chop the mixed vegetables into bite-sized pieces. Set aside for grilling.

  3. 3

    Prepare the Sea Bass

Rinse the sea bass fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Cooking

  1. 4

    Cook the Potatoes

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cooked potatoes and sauté for about 5-7 minutes until they are golden brown. Season with salt and pepper, and keep warm.

  2. 5

    Grill the Vegetables

In the same skillet or on a grill, add another tablespoon of olive oil and heat over medium-high heat. Add the mixed vegetables and grill for about 5-7 minutes or until they are tender and slightly charred. Remove from heat and set aside.

  3. 6

    Grill the Sea Bass

In a separate skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the sea bass fillets and cook for about 4-5 minutes on each side, basting with the garlic butter. Add lemon juice and chopped parsley during the last minute of cooking.

Serving

  1. 7

    Plate the Dish

On a large plate, arrange the sautéed potatoes on one side and the grilled vegetables on the other. Place the grilled sea bass fillet on top of the vegetables. Drizzle any remaining garlic butter over the fish for added flavor.

  2. 8

    Garnish

Garnish the dish with lemon wedges and additional parsley if desired.
