    Marinate the Codfish

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the codfish fillets, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes.

    Grill the Codfish

    Preheat the grill to medium-high heat. Remove the codfish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from heat and set aside.

    Prepare the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers and onions, and sauté for about 5 minutes until they begin to soften.

    Add the diced potatoes to the skillet with the sautéed vegetables. Season with salt and black pepper. Cook for an additional 10-15 minutes, stirring occasionally, until the potatoes are tender and golden.

    In a saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and has absorbed all the water. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
