Peel the Plantains
Using a sharp knife, slice off the ends of each ripe plantain. Make a shallow cut along the length of the plantain and carefully peel away the skin.

Slice the Plantains
Cut the peeled plantains diagonally into slices about ½ inch thick. You can adjust the thickness based on your preference for crispiness.

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat. You want enough oil to cover the bottom of the skillet generously.

Fry the Plantains
Once the oil is hot (test by dropping a small piece of plantain in; if it sizzles, it's ready), carefully add the plantain slices in a single layer. Fry for about 2-3 minutes on each side or until they are golden brown.

Drain Excess Oil
Using a slotted spoon, remove the fried plantains from the skillet and transfer them to a plate lined with paper towels to drain any excess oil.

While the plantains are still warm, sprinkle them with salt, paprika, and garlic powder (if using) according to your taste preference. Toss gently to coat.
