Calamari

Method

Prepare the Marinara Sauce

  1. 1

    Sauté the Garlic

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  2. 2

    Add Tomatoes and Seasonings

Stir in the canned crushed tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Bring to a simmer.

  3. 3

    Simmer the Sauce

Reduce heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally, until thickened.

Prepare the Calamari

  1. 4

    Set Up Breading Station

In one bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, pour in the buttermilk.

  2. 5

    Coat the Calamari

Dip the calamari rings first into the buttermilk, allowing excess to drip off, then dredge them in the flour mixture until evenly coated.

  3. 6

    Heat the Oil

In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 7

    Fry the Calamari

Working in batches, fry the coated calamari rings for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve

  1. 8

    Plate and Serve

Serve the fried calamari hot with a side of marinara sauce for dipping.
