Soak the Potatoes
Place the sliced potatoes into a large bowl and cover them with cold water. Let them soak for at least 30 minutes. This step helps to remove excess starch and will result in crispier fries.

Dry the Potatoes
After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove as much moisture as possible.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, pour the vegetable oil and heat it to 350°F (175°C) over medium-high heat. Use a thermometer to check the oil temperature for accuracy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and black pepper to taste.
