Method

For the Tortillas

  1. 1

    Prepare the Dough

In a large mixing bowl, combine masa harina and salt. Gradually add water, mixing with your hands until a soft dough forms. If the dough feels too dry, add a little more water, 1 tablespoon at a time.

  2. 2

    Form the Tortillas

Divide the dough into 12 equal portions and roll each into a ball. Use a tortilla press or rolling pin to flatten each ball into a tortilla shape, about 6 inches in diameter.

  3. 3

    Cook the Tortillas

Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 30 seconds on each side, until lightly browned and cooked through. Keep warm in a towel until ready to serve.

For the Filling

  1. 4

    Cook the Beef

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened, about 3 minutes.

  2. 5

    Add Spices and Beef

Add ground beef to the skillet. Sprinkle with cumin, chili powder, salt, and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes. Stir occasionally to break up the meat.

  3. 6

    Finish the Filling

Once the beef is cooked, remove from heat and stir in chopped cilantro and lime juice. Adjust seasoning if necessary.

For the Garnish

  1. 7

    Prepare the Garnishes

While the filling is cooking, prepare the garnishes. Slice the avocado, crumble the queso fresco, and set aside the sour cream and fresh salsa.
