Method

Falafel Preparation

    Soak Chickpeas

    Place 1 cup of dried chickpeas in a large bowl and cover with water. Let soak for at least 8 hours or overnight.

    Drain Chickpeas

    After soaking, drain the chickpeas and rinse them well under cold running water.

    Blend Ingredients

    Add the drained chickpeas, chopped parsley, chopped cilantro, chopped onion, minced garlic, ground cumin, ground coriander, baking powder, salt, black pepper, and flour to the food processor. Blend until a coarse mixture forms.

    Chill Mixture

    Scoop the blended mixture into a bowl, cover, and place it in the refrigerator for about 30 minutes to firm up.

    Heat Oil

    Pour 2 cups of vegetable oil into a deep frying pan and heat over medium heat until hot but not smoking.

    Shape Falafel

    Using your hands, form the chilled falafel mixture into small balls or patties, about 1.5 inches in diameter.

    Fry Falafel

    Carefully place the falafel balls into the hot oil. Fry in batches for about 3-4 minutes, turning occasionally, until golden brown on all sides.

    Drain Falafel

    Once golden brown, remove the falafel from the oil with a slotted spoon and place them on paper towels to drain any excess oil.

Tahini Sauce Preparation

    Mix Sauce Ingredients

    In a mixing bowl, add 0.5 cup of tahini, 3 tablespoons of lemon juice, 1 minced garlic clove, 2 tablespoons of water, and 0.5 teaspoon of salt. Whisk until smooth.

    Adjust Sauce Consistency

    If the tahini sauce is too thick, add additional water, one tablespoon at a time, until you reach desired consistency.

Assembling the Dish

    Warm Pita

    Place the pita bread in a dry skillet over low heat or wrap in foil and warm in the oven for 5-10 minutes.

    Assemble Falafel Station

    On each warm pita, place a few falafel, top with shredded lettuce, diced tomato, diced cucumber, and drizzle with tahini sauce.
