Dough Preparation

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, sugar, and salt. Whisk together until well mixed.

    Cut in Butter

    Add the unsalted butter, cut into small pieces, to the flour mixture. Use a pastry cutter or your fingers to blend the butter until the mixture resembles coarse crumbs.

    Add Egg Yolks and Water

    In a small bowl, whisk together the egg yolks and cold water. Add this mixture to the dough and mix until just combined. Do not overwork the dough.

    Chill the Dough

    Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Mix Filling Ingredients

    In a mixing bowl, combine the cream cheese, guava paste, vanilla extract, and powdered sugar. Mix until smooth and well combined. Set aside.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Roll Out Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a cookie cutter or a glass.

    Place a small spoonful of the guava cheese filling in the center of each dough circle.

    Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal. You can use a fork to crimp the edges for a decorative touch.

    In a small bowl, beat the egg with water to make the egg wash.
