    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces. Season with salt, black pepper, and cumin. Set aside.

    Prepare the Vegetables

    Chop the onion, bell pepper, and garlic cloves finely. Set aside.

    Prepare the Beans

    If using dried beans, soak them in water overnight and cook them until tender. If using canned beans, rinse and drain them.

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onions, bell pepper, and garlic, and sauté until the onions are translucent.

    Add the seasoned chicken pieces to the pot and cook until they are browned on all sides.

    Add the Beans and Rice

    Stir in the cooked beans and rice, then add the tomato sauce, chicken broth, bay leaves, and additional seasonings (salt and pepper to taste).
