    Prepare the Fish

    Cut the fish fillets into small cubes and place them in a glass bowl.

    Marinate the Fish

    Pour the lime juice over the fish cubes and let sit in the refrigerator for 1-2 hours. The lime juice will 'cook' the fish.

    Add Vegetables

    After marinating, add the chopped red onion, cilantro, diced tomatoes, chopped bell pepper, salt, and black pepper to the fish. Mix gently.

    Serve the ceviche cold, garnished with avocado slices.

For the Spanish Rice

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

    Add the long-grain rice to the pot and stir to coat the grains in the oil. Cook for about 2-3 minutes until lightly toasted.

    Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in chopped parsley before serving.
