Method

Preparing the Yam

    Peel and Cut the Yam

    Peel the yam using a vegetable peeler. Cut it into thick slices, about 1 inch wide.

    Soak the Yam

    Place the yam slices in a bowl of water and let them soak for about 30 minutes. This helps remove excess starch.

    Dry the Yam

    After soaking, drain the yam slices and pat them dry with a clean kitchen towel.

Frying the Yam

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Yam

    Once the oil is hot, carefully add the yam slices in batches. Fry them for about 5-7 minutes or until they are golden brown and crispy.

    Drain the Yam

    Remove the fried yam slices with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.

Preparing Mama's Dipping Sauce

    Chop the Vegetables

    Finely chop the tomatoes, onion, and scotch bonnet pepper. If you prefer less heat, remove the seeds from the pepper before chopping.

    Mix the Sauce

    In a small bowl, combine the chopped tomatoes, onion, scotch bonnet pepper, salt, lime juice, and chopped cilantro. Mix well until all ingredients are evenly combined.
