Prepare the Dosa Batter
1. Soak the Ingredients
In a bowl, combine rice, urad dal, and fenugreek seeds. Rinse them under cold water. Soak the mixture in enough water for at least 6-8 hours or overnight.
2. Blend to a Batter
Drain the soaked ingredients and transfer them to a blender. Add about 2 cups of fresh water and blend until smooth. The batter should be of pouring consistency.
3. Ferment the Batter
Transfer the blended batter to a large bowl. Cover it with a lid and let it ferment in a warm place for 8-12 hours, or until it has doubled in volume and has a slightly sour smell.
4. Add Salt
Once fermented, stir in the salt to the batter gently without deflating it.
Cook the Dosas
5. Heat the Pan
Heat a non-stick skillet or a cast-iron tawa over medium heat. Drizzle a little oil or ghee to grease the surface.
6. Pour the Batter
Once the pan is hot, pour a ladleful of dosa batter in the center of the pan. Using the back of the ladle, spread the batter in a circular motion to form a thin layer.
7. Cook the Dosa
Drizzle a little more oil or ghee around the edges of the dosa. Cook for about 2-3 minutes or until the edges start to lift and the bottom turns golden brown.
8. Flip and Cook
Carefully flip the dosa using a spatula and cook for an additional 1-2 minutes until the other side is cooked. Remove from the pan and keep it warm on a plate.
9. Repeat
Repeat the process with the remaining batter, greasing the pan as necessary.
Serve with Accompaniments
10. Plate and Enjoy
Serve the hot dosas with coconut chutney and sambar on the side. Enjoy your meal!
