Chop Vegetables
Chop the red bell pepper, green bell pepper, onion, and mince the garlic. Set aside.

Season Chicken
Pat the chicken thighs dry with paper towels. Season them with salt, black pepper, oregano, and cumin on both sides.

Add Garlic and Tomato Sauce
Add the minced garlic and stir for 1 minute. Then pour in the tomato sauce, mixing well to combine.

Add Rice and Broth
Stir in the long-grain rice, ensuring it’s coated with the sauce. Pour in the chicken broth and add the bay leaves. Bring to a boil.

Once boiling, reduce heat to low. Nestle the seared chicken thighs on top of the rice mixture. Cover the pot and let it simmer for about 20-25 minutes until the rice is cooked and has absorbed the liquid.
