    Gather Your Supplies

    Ensure you have a large pot, a thermometer, a whisk, a clean container for incubation, and a towel or blanket for insulation.

    Heat the Milk

    Pour 32 oz of whole milk into a large pot. Heat the milk over medium heat, stirring occasionally, until it reaches about 180°F (82°C). This helps to denature the proteins.

    Cool the Milk

    Remove the pot from heat and allow the milk to cool to about 110°F (43°C). This will ensure that the yogurt cultures can thrive when added.

    Add the Yogurt Starter

    In a small bowl, mix 2 tablespoons of plain yogurt with a small amount of the cooled milk to create a smooth mixture. Then gently whisk this mixture back into the pot of cooled milk.

    Incubate the Yogurt

    Pour the milk and yogurt mixture into a clean container. Cover it with a lid or plastic wrap, then wrap it in a towel or blanket to maintain warmth. Let it sit undisturbed in a warm place for 6 to 12 hours, depending on how tangy you want your yogurt.

    Check the Yogurt

    After the incubation period, check the yogurt. It should be thickened and have a slightly tangy flavor. If it’s not set, let it sit for a few more hours.

    Refrigerate

    Once set, transfer the yogurt to the refrigerator to cool down. This will stop the fermentation process. Chill for at least 2 hours before serving.
