Prepare the Fish Filling

    Cook the Cod

    In a saucepan, bring water to a boil. Add the cod fillets and cook for about 10-12 minutes, or until cooked through and flaky. Drain and let cool.

    Mix the Filling

    Once cooled, flake the cod into a bowl. Add lemon juice, minced garlic, chopped parsley, salt, and black pepper. Mix well until combined.

Assemble the Rolls

    Prepare the Spring Roll Wrappers

    Lay a spring roll wrapper on a clean, flat surface. Place about 2 tablespoons of the fish filling near one edge of the wrapper.

    Roll the Wrapper

    Fold the sides of the wrapper over the filling, then roll it tightly from the edge closest to you towards the far edge. Seal the edge with a little beaten egg.

    Repeat

    Repeat the process with the remaining wrappers and filling until all are wrapped.

Fry the Rolls

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium heat until hot (around 180°C or 350°F).

    Fry the Rolls

    Carefully add the fish rolls to the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown.

    Drain and Serve

    Once cooked, remove the rolls and drain on paper towels. Serve hot with your choice of dipping sauce.
