Method

Base Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

  2. 2

    Cream Butter and Sugar

In another bowl, cream the softened butter and granulated sugar together until light and fluffy.

  3. 3

    Add Eggs and Vanilla

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. 4

    Combine Mixtures

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Filling Preparation

  1. 5

    Mix Filling Ingredients

In a mixing bowl, combine the ricotta cheese, powdered sugar, lemon zest, cinnamon, and chopped walnuts (if using). Mix until smooth and creamy.

Assembly and Baking

  1. 6

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. 7

    Layer Base and Filling

Pour half of the batter into the prepared cake pan. Spread the ricotta filling evenly over the batter, then top with the remaining batter.

  3. 8

    Bake

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.

  4. 9

    Cool and Dust

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack. Once cooled, dust with powdered sugar and garnish with fresh mint.
