Making the Yogurt

    Prepare the Milk

    In a large saucepan, heat the nonfat milk over medium heat until it reaches 180°F (82°C). Stir occasionally to prevent scorching.

    Cool the Milk

    Once the milk has reached 180°F, remove it from the heat and allow it to cool to about 110°F (43°C). This can take about 30 to 40 minutes.

    Add Starter Culture

    In a small bowl, mix the plain yogurt with a few tablespoons of the cooled milk to create a smooth mixture. Once combined, whisk the yogurt mixture back into the cooled milk.

    Incubate the Yogurt

    Transfer the mixture to a clean container or yogurt maker. Keep the temperature around 110°F (43°C) for about 6 to 12 hours. The longer it sits, the thicker and tangier it will become.

    Cool the Yogurt

    After incubation, transfer the yogurt to the refrigerator and let it cool for at least 2 hours before consuming.

Flavoring the Yogurt (optional)

    Sweeten the Yogurt

    If desired, stir in honey or maple syrup to taste, and add vanilla extract for additional flavor.

    Top the yogurt with fresh fruit before serving for added flavor and nutrition.
