Preparation of Chicken

Marinate the Chicken
In a large bowl, combine chicken thighs, suya spice mix, vegetable oil, minced garlic, minced ginger, salt, and lemon juice. Mix well to ensure the chicken is evenly coated. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight for more flavor.

Cooking the Chicken

Grill the Chicken
Remove the marinated chicken from the refrigerator. Place the chicken thighs on the preheated grill. Grill for about 6-8 minutes on each side or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing. This helps the juices redistribute.

Prepare the Garnish
While the chicken is resting, prepare the garnish by combining shredded cabbage, sliced red onion, diced tomatoes, and chopped parsley in a bowl. Toss gently to mix.
