Chicken Cordon Bleu Preparation

Prepare the Chicken
Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet.

Stuff the Chicken
Lay a slice of ham and a slice of Swiss cheese on each chicken breast. Roll them up tightly and secure with toothpicks.

Cook the Chicken
In a large skillet, heat olive oil and butter over medium heat. Add the chicken rolls and cook for about 4-5 minutes on each side until golden brown. Transfer to a baking dish and bake for 15-20 minutes until cooked through.

Make the Sauce
Add the chicken broth, heavy cream, and Dijon mustard to the skillet. Stir well and let it simmer for 5-7 minutes, seasoning with salt and pepper to taste.

Spread the potatoes on a baking sheet and roast in the oven at 375°F (190°C) for about 25-30 minutes until golden and crispy.
