Prepare the Dough
In a large mixing bowl, combine the cornmeal, cheddar cheese powder, salt, paprika, and garlic powder. Mix well to ensure all dry ingredients are evenly distributed.

Add Wet Ingredients
Melt the butter and add it to the dry ingredients. Gradually add the water while mixing until a dough forms. It should be a thick but pliable consistency.

Shape the Snacks
Using your hands, take small pieces of the dough and roll them into puff shapes, about 1 inch long. Place them on a parchment-lined baking sheet.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of dough; if it sizzles and floats to the top, the oil is ready.

Fry the Puffs
Carefully drop the puff shapes into the hot oil in batches, making sure not to overcrowd the pot. Fry them for about 2-3 minutes or until they are golden brown and puffed up.

Drain and Season
Using a slotted spoon, remove the puffs from the oil and place them on paper towels to drain excess oil. While they are still hot, sprinkle with additional cheddar cheese powder if desired.
