Pasta

Method

Pasta

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, beat the eggs gently, then gradually incorporate the flour until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

  3. 3

    Roll Out the Dough

After resting, divide the dough into quarters. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour as needed.

Cheese Filling

  1. 4

    Prepare the Filling

In a bowl, mix together the ricotta cheese, parmesan cheese, mozzarella cheese, egg yolk, salt, black pepper, and chopped parsley until well combined.

  2. 5

    Fill the Ravioli

Place teaspoons of the cheese filling onto one sheet of pasta, about 2 inches apart. Brush the edges of the pasta with water, then cover with another sheet and press down to seal.

  3. 6

    Cut the Ravioli

Use a knife or a ravioli cutter to cut out individual ravioli. Make sure the edges are sealed well to prevent filling from leaking.

Marinara Sauce

  1. 7

    Cook the Sauce

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

  2. 8

    Add Tomatoes and Seasoning

Stir in the crushed tomatoes, salt, sugar, dried oregano, and cook for 15-20 minutes on low heat, allowing the flavors to meld.

  3. 9

    Finish the Sauce

Just before serving, stir in the fresh basil.

Cooking the Ravioli

  1. 10

    Boil the Ravioli

Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes until they float to the top.

  2. 11

    Serve

Drain the ravioli and serve immediately with marinara sauce poured over the top.
