Preparation

    Prepare the Nopal Cactus

    Rinse the nopal cactus pads under cold water to remove any dirt. Using a sharp knife, carefully trim the edges to remove the spines. Cut the pads into small strips or cubes, depending on your preference.

    Cook the Nopal Cactus

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the trimmed cactus pads and sauté for about 5-7 minutes until they become tender and slightly translucent. Remove from heat and set aside.

    Chop the Vegetables

    While the nopal is cooking, dice the tomatoes, red onion, and jalapeño (if using). Chop the fresh cilantro and set aside.

    Prepare the Dressing

    In a small bowl, whisk together the remaining tablespoon of olive oil, the juice of two limes, salt, and black pepper. Taste and adjust seasoning as necessary.

    Combine Ingredients

    In a large bowl, combine the cooked nopal cactus, diced tomatoes, red onion, cilantro, and jalapeño (if using). Pour the dressing over the mixture and toss gently to combine.

    Crumble feta cheese over the top of the salad and gently fold it in to avoid breaking the cheese too much.
