Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, salt, and butter. Mix with your hands until the butter is well incorporated.

  2. 2

    Add Wet Ingredients

Add the eggs and milk to the flour mixture. Knead the dough until it is smooth and elastic, about 5-7 minutes. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Filling Preparation

  1. 3

    Cook the Filling

In a skillet over medium heat, heat the olive oil. Add the chopped onion and cook until translucent, about 3-4 minutes.

  2. 4

    Add Chicken and Seasonings

Stir in the minced garlic and cook for another minute. Then, add the shredded chicken, black olives, grated Parmesan cheese, salt, black pepper, and chopped parsley. Mix well and cook for another 5 minutes. Remove from heat and let it cool.

Assembly and Cooking

  1. 5

    Form the Salgadinhos

Preheat your oven to 375°F (190°C). Take the rested dough and roll it out to about 1/8 inch thick. Cut out circles using a cookie cutter or a glass.

  2. 6

    Fill and Seal

Place a spoonful of the filling on each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.

  3. 7

    Prepare for Baking

Dip each filled salgadinho in the beaten egg and then coat with breadcrumbs.

  4. 8

    Bake

Place the coated salgadinhos on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy.
