Prepare the Goat Meat
Wash and dice the goat meat into bite-sized pieces. Pat dry with kitchen paper to remove excess moisture.

Prepare the Vegetables
Slice the cabbage, red onion, and bell pepper (if using) into thin strips and set aside.

Prepare the Ghost Pepper
Carefully slice the ghost peppers, removing the seeds if you prefer less heat. Wear gloves to avoid irritation.

Marinate the Goat Meat
In a mixing bowl, combine the diced goat meat, salt, black pepper, ground ginger, and thyme. Mix well and let it marinate for at least 30 minutes.

Heat the Oil
In a large skillet or pot, heat the vegetable oil over medium-high heat until shimmering.

Cook the Goat Meat
Add the marinated goat meat to the hot oil. Sear the meat until browned on all sides, about 10-15 minutes.

Add the sliced ghost peppers to the skillet with the goat meat. Stir well to combine and cook for an additional 5-7 minutes until the peppers release their heat.
