Preparation of Meat
- 1
Marinate the Meat
In a large bowl, combine the cubed beef, chicken pieces, and pork. Add minced garlic, grated ginger, chopped onion, salt, black pepper, paprika, and cayenne pepper. Mix well to coat the meat evenly. Cover and let it marinate for at least 1 hour or overnight in the refrigerator for best results.
- 2
Sear the Meat
Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated meat mixture and sear until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.
Preparation of Fish
- 3
Marinate the Fish
In a separate bowl, combine tilapia fillets and shrimp with a pinch of salt and pepper. Let them marinate for about 15-20 minutes.
- 4
Cook the Fish
In the same skillet, add the remaining tablespoon of vegetable oil. Add the marinated fish and cook for about 3-4 minutes on each side until cooked through and golden. Remove and set aside.
Combining Ingredients
- 5
Sauté Vegetables
In the same skillet, add sliced bell pepper, zucchini, and halved cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
- 6
Combine Meat and Fish
Return the cooked meat and fish to the skillet with the sautéed vegetables. Stir gently to combine and heat through for an additional 2-3 minutes. Adjust seasoning if necessary.
Serving
- 7
Serve
Serve the Akwaaba Meat & Fish hot, garnished with fresh herbs if desired. Enjoy with rice or a side salad.
