Preparing Sushi Rice

    Rinse the Rice

    Place 2 cups of sushi rice in a fine mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    Transfer the rinsed rice to a rice cooker. Add 2 cups of water and cook according to the rice cooker instructions. If using a pot, bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

    Season the Rice

    In a small bowl, mix 1 tablespoon of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the seasoning. Let it cool to room temperature.

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon into thin strips, about 1 cm wide.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and slice it into thin strips.

    Slice the cucumber into thin strips, similar in size to the salmon and avocado.

Assembling Sushi

    Place a nori sheet, shiny side down, on a bamboo sushi mat or a clean cutting board.

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 2 inches at the top edge.

    Layer the Fillings

    Place a few strips of salmon, avocado, and cucumber horizontally across the rice, about 1 inch from the bottom edge.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Seal the edge of the nori with a little water.

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
