Prepare filling

    Heat skillet and cook aromatics

    Place a 10–12 inch nonstick skillet over medium heat. Add the butter and let it melt until foaming but not browned (about 30 seconds). Add the diced onion and sauté 1–2 minutes until it begins to soften. Add both diced bell peppers and continue to cook 2–3 minutes until peppers are tender-crisp.

    Add ham and finish filling

    Stir in the diced ham and cook another 1–2 minutes until heated through and edges begin to brown slightly. Transfer the filling to a small bowl and wipe the skillet clean with a paper towel, leaving any browned bits if desired for flavor.

Make the omelet

    Beat eggs

    In a bowl combine the eggs, milk, salt, and pepper. Whisk vigorously until the mixture is uniform in color and slightly frothy (about 20–30 seconds).

    Cook eggs

    Reduce skillet heat to medium-low and add a little additional butter or a light spray of oil to coat. Pour the beaten eggs into the skillet and let sit undisturbed for about 15–20 seconds until the edges begin to set. Using a spatula, gently pull the edges toward the center while tilting the pan to allow uncooked egg to run to the edges. Repeat this motion around the skillet for about 1–2 minutes until the surface is mostly set but still slightly moist on top.

    Add filling and cheese

    Evenly distribute the cooked onion, pepper and ham mixture over one half of the omelet. Sprinkle the shredded cheddar cheese over the filling and scatter the sliced chives or green onions on top.

    Fold and finish

    Carefully lift the other half of the omelet and fold it over the filling using the spatula. Continue to cook for 30–60 seconds to melt the cheese and finish cooking through (keep heat low to avoid browning). If desired, cover the skillet briefly (15–30 seconds) to help cheese melt.

    Serve

    Slide the omelet onto a plate. Taste and add a small pinch of additional salt and pepper if needed. Serve immediately.
