    Dry shake (if using egg white)

    Add gin, Aperol, lemon juice, elderflower liqueur, simple syrup, orange bitters and egg white to a cocktail shaker. Do not add ice yet. Secure the lid and shake vigorously for 15–20 seconds to emulsify and create foam.

    Wet shake

    Open the shaker and add ice (about 1 cup). Seal and shake hard for 12–15 seconds until the shaker is very cold to the touch and well chilled.

    Strain

    Double-strain the mixture into a chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a silky texture.

Garnish & Finish

    Express the oils of a lemon twist over the surface of the cocktail by holding the twist over the glass and pinching it so the oils spray onto the drink. Run the twist around the rim and drop it into the drink or perch it on the edge.

    If using an edible flower or star fruit slice, float it gently on the foam for an elegant presentation.

    Serve immediately while the foam is fresh and the cocktail is chilled.
